Twin Brother of Madeline, and son of Charlotte. A pastry chef like his mother, and previously employed at Dimanche (Dee-mahnsh). Now owns Cosmos Bakery (Formerly Quartz Bakery) in the same shopping center as Gourmet Hound and the Bell Corner Bookshop. More mellow than his sister, he believes in loyalty more than anything. When trust is broke then chip on his shoulder is large, and he becomes extremely cold and hostile.

(Sincere) I'm afraid I wasn't close to Chef Bartlett, I worked mostly with my mother and the other pastry chefs. My mother is very fond of him, though.
(Wistfully) ... I'm fond of stubborn people. (Serious, but Kind) I've already spoken to the patissiers you three interned with and your instructors, and they've vouched for your technical capabilities and character. It will be difficult and demanding work, but would you like to open my patisserie with me?
