Candy Kong's voice is feminine, but lower in pitch than Maya or Dixie. In terms of age she's definitely older than the other female characters, so her voice would naturally be just a tad more mature sounding.
Candy's emotions tend to resonate with Donkey Kong's current situations as well, because she cares about her boyfriend a lot. For example, when DK is in jail she acts very sad and much more emotional than usual. Aside from that, Candy is usually pretty neutral in personality.
Here are some regular lines, fairly neutral:

"W-w-wow! Really? That's... really swell of you, Bluster!"
"I wonder what DK has planned for us? I can only hope it ends in a romantic evening together."

She has a few lines while being mind controlled by Leo Luster, here's one for example.
