The Ancient Cookie of Truth, Pure Vanilla Cookie is trapped in the body of his nemesis, Shadow Milk Cookie. So his voice will be identical to Shadow Milk Cookie's canon one. (This video is a decent sample of that: https://www.youtube.com/watch?v=K6ve53rPyLs)
When in his right mind, he is somewhat "mousey" -- a nasally, scratchy voice, squeaking when he's startled, and overall being very timid and apologetic. It is not inaccurate to say that the sound of his voice frightens him.
Over the course of the story, he develops more of Shadow Milk's mannerisms, including the tendency to lose his temper over minor things and slip into a higher-pitched, singsong tone when annoyed. When he's truly losing himself, his voice devolves into a more animalistic growl.
The audition lines are good examples of his three different mental states. In the first, he is disheartened but in his right mind. In the second he is annoyed and starting to lose himself. In the third, he is in a full-on rage, trapped in a flashback and completely unaware of his real surroundings.

"Hellooo? You do both realize I'm right here? And...hold on! What is Candy Apple Cookie doing back at the Spire?"

The Beast of Deceit, Shadow Milk Cookie is now in the body of his nemesis, Pure Vanilla Cookie. So his voice will be identical to Pure Vanilla Cookie's canon one. He is a master actor who can imitate Pure Vanilla's mannerisms perfectly.

Shadow Milk is the one who cast the body swapping spell and plans to use it to steal Pure Vanilla's powers and allies. His voice is melodic, but it will bounce between gentle and kind when he has an audience to mocking and cruel when he and his minions are the only ones in the room.
In the first audition line, he is behaving fully in character, pretending to be worried about White Lily's mental state. In the second, he is aware others are in hearing range, but he is annoyed at his minion and he's trying to give a pointed message without making Pure Vanilla's friends suspicious. In the third, he is speaking to his minion alone and has gone into full villainous plotting mode.
"I must beg a favor of you. Please, for White Lily’s sake, do not let the results of this test leave this room. We must preserve her dignity and not let rumors spread."
"We won't know what Strawberry Cookie was thinking until we talk to her. Though I'll admit I do feel uneasy traveling without our FULL team of allies by our side."
"Tsk-tsk-tsk. You're missing everything. I'm trying to break Vanilly. Wanna know how you break things? You put stress on them. You do NOT leave them to relax."
Espresso Cookie is a scientist and teacher at the Parfaedia Institute. He is highly impatient with others, but rather than talking quickly, he speaks in a concise, pointed manner so as to not waste time with repeating himself.
Espresso Cookie's introduction in "Last Cookie Standing":
"If an M.E.H. detective needs to interview me, he can wait for the next open slot on my schedule like anybody else. There's someone I need to talk to right now."
"Don’t be ridiculous. When has the presence of my brilliant mind made any situation worse?"
"I told you to listen! If you use magic against them, you'll only make things worse!"
Wizard Cookie is a mage who is very down to earth and logical, though his voice is reminiscent of a quirky bumbling magic professor. He is also much younger than he actually sounds.

Head Builder Cookie has a voice identical to Wizard Cookie's, but he is far less confident. He is a village cookie from Shadow Milk's past who nervously questions if the Sage of Truth is actually telling the truth. Pure Vanilla Cookie will mistake one for the other during a scene. (Note: Head Builder Cookie is a fanon character.)
"I still can't believe Almond Cookie and Espresso Cookie didn't come to help search. Really, they're professionals, aren't they? It's bad enough Strawberry Cookie ran off on us."
"Please forgive my boldness, Great Sage. But may we speak in private? It's about the dam."
"I do not mean to sound doubtful, but...well, that was several weeks ago. And I wonder if perhaps circumstances have changed?"
Crunchy Chip Cookie is a soldier from the Dark Cacao Kingdom. He has a gruff, scratchy voice and tends to get worked up easily. In this story, specifically, he has been doing some secret training with Cloud Haetae Cookie, and he's embarrassed when Wildberry Cookie and Hollyberry Cookie learn about it. (The 2nd audition line occurs right after they've found out.)
"The Beast herself might be an overzealous nutcase, but her followers do actually think she means to help cookiekind. They're almost friendly if you act interested in their garbage."
"I-I told you! I get info where I can, and it's a good way to keep tabs on what Mystic Flour is up to!"
Wildberry Cookie is Hollyberry Cookie's bodyguard. He has a deep, smooth voice and leans towards a monotone but will use more inflection when he is relaxed or amused.
"I doubt the Ancients themselves are here. But we could send a message back with Crunchy Chip Cookie. He visits here a lot."
"What's our approach, then? Send Beast-Yeast a fake letter of interest in garbage?"
Sage of Truth is Shadow Milk Cookie's former self, also known as the Fount of Knowledge. He has been telling more and more lies to see if cookies with believe him even when the lies are obvious. He sounds similar to Shadow Milk, but with a gentler, calmer tone.
"You must understand, life is not just about Knowledge. Not at all! Knowledge is simply a culmination of the general public's beliefs. But it's Truth you must pay attention to!"
"I am positive of every answer I give. I'm afraid the logic of your question is unclear."
This is Pure Vanilla Cookie while he is still a student at Blueberry Yogurt Academy, discussing magic with a young White Lily. Pure Vanilla is the more level-headed of the pair, so despite being a teenager in this scene, he may sound more mature as he tries to be the voice of reason.
"That's the portrait of the first headmaster. Wise, brilliant... He's the one who taught the Cookies how to use magic."
"I can't believe this! White Lily Cookie, listen to yourself!"
