Grillby doesn't seem much when you see him in undertale, so this is more than a measly headcannon. He is a hard worker, and tends to be flat with his emotions. But when you see them, you can see he's still as human/monster than the rest of us. Kind and respectful, Grillby is a good friend to have.
"Hm? Oh hello there. Welcome to my resteraunt. How are you? Oh. I know you're a human. I have nothing against that. A customer is a customer. I hope you feel welcome here"
"Alright...first you peel the potatos into thin slices. Make sure you skin the potato first...you want the fries to be nice and clean. Do you have all of your slices? Good. Now cook them precisely at 600°F for three seconds... Hm? That's how I make them. You don't superheat your food? Hahah! That's odd! How do you make your food then little human?"
"I know I don't do much, but I will do what I can to help. I'm not a fighter like the rest of you...and I may not be as clever, or outgoing, or active.. But I do want to help. Whatever you want me to do, I'll show you I'm more than capable. Snacks? Yes I can do that too. Heheh!"
